INDEPENDENCE DAY AND DIABETES MANAGEMENT

Every year on 15th of August, we celebrate Independence Day. It is the most valuable day for every Indian to celebrate our abundance freedom. Let’s celebrate our 71th Independence Day with not just sweets but tri colored savory dish also.

TRI COLOUR DHOKLAS

Tri colour dhoklas are delicious, healthy and easy to make.  It has vegetables like spinach carrots which are rich in Iron, Vitamins and Minerals, Fiber. This Independence Day manage your diabetes with this healthy yet tasty recipe. You can have as a breakfast or evening snack

INGREDIENTS:

1 ½ cups semolina
½ cup curds
1 ½  tsp ginger-green chilli paste
salt to taste
1 ½  tsp fruit salt
1 tbsp oil
1 tsp mustard seeds
1 tsp sesame seeds
a pinch of asafoetida
Green batter:

½ cup spinach puree

1 green chili

Saffron Batter:

1/2cup carrot puree

1 tsp turmeric powder

1 tbsp red chili powder

White batter

1/4 cup finely chopped and boiled mixed vegetables (optional)

METHOD:

  1. Combine the semolina, curds, ginger-green chilli paste, oil, salt and 1½ cups of water in a deep bowl and mix well to make a smooth batter. Cover and keep aside to ferment for atleast 30 minutes. Now divide the mixture into three equal parts.
  2. To make saffron color mixture, add carrot puree, turmeric and red chili powder into one part.To make green color mixture, first of all grind the spinach and 1 green chili into food processor and make smooth paste of it. Then add that puree into one part of mixture and your green color paste is ready to use.
  3. Keep the third part as it is. Just add boiled veggies if you wish to; to make it more nutritious.
  4. Just before steaming the dhoklas, add the fruit salt and 2 tsp of water over the batter. When the bubbles form, mix gently.
  5. Take one bowl and grease it with some oil. First add 2 tbsp green batter and put it into streamer and let it stream for 2-3 minutes.
  6. Now take out bowls, add 2 tbsp white batter layer, and steam it again for 2-3 minutes. Finally, add 2 tbsp of third saffron color layer and steam it for 5 minutes.
  7. Heat the oil in a small pan, add the mustard seeds, sesame seeds and asafoetida and sauté on a medium flame for a few seconds.
  8. Pour the tempering over the prepared dhoklas. Your tri-color dhokla is ready to serve. Nutrient values per serving:Energy 150kcal; Protein 5gm; Carbohydrate 25gm; Fat 4gm
