Manage your Diabetes this Christmas with these Goodies

Christmas is both a sacred religious holiday and a worldwide cultural and commercial phenomenon. Popular customs include exchanging gifts, decorating Christmas trees, attending church, sharing meals with family and friends and, of course, waiting for Santa Claus to arrive.

Eating at Christmas is a major part of celebration, and there’s no need to completely miss out on specific foods only because you are a Diabetic . But a healthy diet is important for managing diabetes.

So, here are some recipes only for you to enjoy this Christmas without any regrets!!!

VIRGIN MOJITO

Virgin Mojito, a traditional delicious and refreshing drink, adds a sparkle to any party, being a great replacement for alcoholic beverages.

Ingredients:

  • 16 large fresh mint leaves, plus 4 sprigs to serve
  • 2 fresh limes, washed and cut into small chunks
  • 4 tsp granulated artificial sweetener.
  • 750ml sparkling water
  • 12 ice cubes (optional)
  • 1 fresh lime sliced or cut into wedges, to serve

Method:

  1. Divide the mint leaves and lime chunks between four individual glasses, giving each chunk a squeeze as you add it.
  2. Add the sweetener and squash together with the handle of a wooden spoon to bring out the juice and flavours.
  3. Add the ice cubes to each glass, top up with sparkling water, stir and serve with a sprig of mint, a couple of pieces of lime and a straw.

FRUITED OATMEAL COOKIES

Ingredients:

  • 1 cup rolled oats
  • 1/4 cup butter, softened
  • 2 tbsp sugar substitute
  • ¼  tsp baking soda
  • ¼  tsp salt
  • ½ cup plain low fat yogurt
  • 1 egg, lightly beaten
  • 2-3 drops of vanilla essence
  • 1 ½ cups flour
  • ¼  cup apricots
  • ¼  cup currants
  •  ¼  cup chopped walnuts, toasted

Method:

  1. Preheat oven to 375 degrees F. Spread oats in a shallow baking pan. Bake about 10 minutes or until toasted, stirring once; set aside. Lightly coat cookie sheet with cooking spray or line with parchment paper; set aside.
  2. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar substitute, baking soda and salt; beat until combined. Beat in yogurt, egg, and vanilla. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in oats, apricots, currants, walnuts, and any remaining flour. Drop dough by rounded teaspoons 2 inches apart on prepared cookie sheet.
  3. Bake for 9 to 11 minutes or until edges and bottoms are browned. Transfer cookies to a wire rack; let cool. To store, place cookies in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 2 months.
